The winery at Podernovi, built mostly underground, fits seamlessly into the surrounding landscape, and uses a sophisticated thermo-hydraulic system which ensures that the temperature and humidity of the winery are controlled in a natural way.
The same care is taken at every stage of the production process in the quest for the highest possible quality with minimal environmental impact: from vineyards to winemaking, from bottling to packaging, every operation is geared towards respect for nature and the consumer.
For this reason, in 2013 San Polo received CasaClima Wine certification, a seal of quality established to quantify and communicate the efforts of wineries towards greater sustainability. Organic viticultural protocols have been in use since 2014, and in 2017, San Polo obtained official organic viticulture certification.
